ACT I Edomae.


The Master says,


“Edomae.”


He is looking at a basket of sardines.


Not because they are expensive.


Not because they are rare.


Because now is the time.


That, he says, is Edomae.

Originally, Edomae referred to fish and shellfish caught in Edo Bay, now known as Tokyo Bay.


Over time, the meaning expanded beyond species themselves. It came to describe a cultural approach to handling seafood—understanding freshness, seasonality, and the right moment to serve it.
